Panzanella

What seems unfamiliar is often made of things we already know.

Beyond the Ingredients

Why This Recipe Matters

Bread as the main ingredient in a salad isn't exactly what most of us expect. It's different, unfamiliar, and perhaps a little difficult to imagine how it all comes together.

But look a little closer.

Tomatoes, cucumbers, onions, bread, olive oil, and vinegar. Nothing particularly unusual about any of those ingredients. They're things we already recognize and understand, simply brought together in a way we might not have considered before. What initially seemed strange suddenly doesn't seem quite so foreign.

Life has a way of presenting us with unfamiliar situations, too. New surroundings, unexpected changes, or circumstances we never imagined facing can leave us uncertain about what to do next. When everything feels different, it's easy to become so focused on what we don't recognize that we overlook the things we still understand and the choices we can still make.

But unfamiliar doesn't always mean we're starting from nothing. We carry our experiences, knowledge, and abilities with us, even into circumstances we've never encountered before. There may be things we can't change or fully understand, but there are often smaller pieces we recognize and decisions that remain ours to make.

The Takeaway

We don't have to understand everything at once or know exactly how things will turn out. Sometimes, finding our footing simply means starting with what we know, making the next decision, and recognizing that we may already have more of what we need to navigate the unfamiliar than we realize.

How to Make It

Directions

  1. 1

Preheat a large pan over medium-high heat. Toss the bread cubes with a drizzle of olive oil and a pinch of salt.

  2. 2

Add the bread cubes to the hot pan and toss them occasionally, toasting for 5–8 minutes until golden and slightly crunchy but not rock hard. You want them crispy outside with a little give inside. Let cool slightly.

  3. 3

Meanwhile, in a large bowl, combine the tomatoes, cucumber, and red onion.

  4. 4

In a small bowl, whisk together 3 tbsp olive oil, red wine vinegar, garlic, salt, and pepper to make the dressing.

  5. 5

Pour the dressing over the vegetables and toss well.

  6. 6

Add the toasted bread cubes to the bowl and toss everything together.

  7. 7

Let the salad sit for 15–20 minutes at room temperature — this is the key step where the bread soaks up all the juices.

  8. 8

Scatter the torn basil over the top and toss once more before serving.

  9. 9

Taste and adjust with more vinegar, salt, or olive oil as needed.

From the Kitchen

Small Things That Matter

  • The best panzanella starts with the best tomatoes — use the ripest, most flavorful ones you can find

  • Don't rush the soaking time — 15–20 minutes is where all the magic happens as the bread absorbs the tomato juices

  • Slightly stale bread is actually ideal here — it soaks up flavor without disintegrating

  • Dress the salad just enough before the wait, then taste and adjust again right before serving

Variations & Additions

Make It Yours

  • Add fresh mozzarella balls or burrata torn over the top for a creamy, indulgent addition
  • Toss in Kalamata olives and a few capers for a briny, savory punch
  • Grill the bread instead of toasting it in the pan for a smoky, charred flavor
  • Add a handful of arugula just before serving for a peppery green freshness
