Corn Chowder

What we build today becomes the foundation for what we can accomplish tomorrow.

Beyond the Ingredients

Why This Recipe Matters

Corn chowder takes a little more preparation than many soups. There's corn to prepare, potatoes to dice, vegetables to chop, and several ingredients that need to be cooked at different times. It isn't a recipe where everything goes into one pot at once.

You begin by cooking the bacon, which leaves behind flavor for the vegetables. The onions, celery, and peppers build on that foundation. The flour helps thicken the broth, the potatoes add substance, and the corn and cream bring everything together. Each stage contributes something that becomes part of the next. By the time the chowder is finished, every step has played a role in creating something greater than any one ingredient could have produced alone.

Life develops in much the same way. The things we learn, the experiences we have, and the efforts we make don't exist independently of one another. They influence how we approach new situations, the decisions we're able to make, and the opportunities we recognize along the way.

We don't always appreciate the value of an experience while we're going through it. A skill we're learning may seem insignificant. An accomplishment might feel too small to matter. Even an experience that didn't turn out as we hoped can leave us with knowledge or understanding that becomes valuable later.

But what we've gained doesn't lose its value simply because we've moved on to something else. Each experience becomes part of the foundation we're building, giving us something to draw upon as we face new challenges and opportunities.

We can't always know how something we're doing today will influence our future. What we can recognize is that our efforts have value beyond the immediate result.

The Takeaway

Every skill we develop, every lesson we learn, and every accomplishment we make becomes part of what we carry forward. What we build today can help us accomplish things tomorrow that we aren't yet able to imagine.

What You Need

Ingredients

How to Make It

Directions

  1. 1

If using fresh corn, cut the kernels off the cobs. Then scrape the cobs with the back of the knife to extract the corn 'milk' into a bowl — this adds incredible sweetness and body to the chowder.

  2. 2

Cook bacon in a large pot over medium heat until crispy. Remove and set aside, leaving 2 tbsp fat in the pot.

  3. 3

Add onion, celery, and red bell pepper to the pot. Cook for 6–8 minutes until softened.

  4. 4

Add garlic and cook for 1 minute.

  5. 5

Sprinkle flour over the vegetables and stir for 2 minutes to cook out the raw taste.

  6. 6

Gradually pour in the broth while whisking to prevent lumps.

  7. 7

Add potatoes, corn kernels, corn milk (if using fresh), smoked paprika, and thyme. Bring to a boil.

  8. 8

Reduce heat and simmer for 15 minutes until potatoes are tender.

  9. 9

For a creamier texture, use an immersion blender to blend about a third of the soup in the pot.

  10. 10

Stir in heavy cream and heat gently for 3 minutes. Do not boil.

  11. 11

Season with salt and plenty of black pepper.

  12. 12

Ladle into bowls, top with crispy bacon and fresh chives.

From the Kitchen

Small Things That Matter

  • Scraping the corn cobs for 'milk' is an old trick that adds natural sweetness and makes the broth creamier

  • Don't boil after adding the cream — gentle heat keeps the chowder smooth and prevents curdling

  • Blending a portion of the soup while leaving the rest chunky gives you the best of both textures

  • Fresh summer corn is ideal, but frozen corn works beautifully year-round — add it straight from frozen

Variations & Additions

Make It Yours

  • Add diced jalapeño with the onion for a spicy, smoky corn chowder with a Southwest flair
  • Stir in crab meat or shrimp in the last 5 minutes for a special seafood corn chowder
  • Top with shredded cheddar cheese and a spoonful of sour cream for a loaded baked potato-style bowl
  • Swap the bacon for smoked paprika oil to make a wonderful smoky vegetarian version
  • Use fire roasted corn
  • Swap the bacon for sausage
