Chicken Fried Chicken

What we've already learned can take us further than we realize.

Beyond the Ingredients

Why This Recipe Matters

Chicken Fried Chicken brings together several cooking techniques that may already be familiar. Preparing chicken, managing the heat of a pan, and making country gravy are skills we can learn through other recipes. Dredging the chicken in seasoned flour and shallow frying introduce something new, but much of the process builds upon what we already know.

What makes this recipe particularly interesting is how one part contributes to another. After the chicken is cooked, some of the oil and flavorful drippings left in the pan become the foundation for the gravy. Something we've already used continues to have value, adding flavor and richness to the finished meal.

Our experiences often work in similar ways. Throughout life, we develop knowledge and abilities through the responsibilities we've managed, the decisions we've made, and the challenges we've faced. Those experiences don't lose their value simply because the circumstances in which we gained them have passed.

When we're confronted with something unfamiliar or difficult, we may focus on what we lack rather than recognizing what we already possess. We can overlook the ways our previous experiences have prepared us, or how abilities developed for one purpose might be useful in another.

But we don't always have to begin again. We can build upon what we've learned, adapt skills to new circumstances, and recognize opportunities to use our existing knowledge in ways we hadn't considered before.

The Takeaway

What we've already accomplished has value beyond the moment it was achieved. Our experiences become part of what we carry forward, giving us knowledge, abilities, and resources we can draw upon as we face whatever comes next.

What You Need

Ingredients

Serves 4 servings

  • chicken

  • gravy

How to Make It

Directions

  1. chicken

  2. 1

Set up a breading station: one bowl with seasoned flour (flour, salt, pepper, garlic powder, onion powder, paprika), and one bowl with eggs whisked together with buttermilk.

  3. 2

Dredge each pounded chicken breast in the flour, shaking off excess. Dip into the egg mixture, then back into the flour, pressing gently to adhere. Set on a rack.

  4. 3

Heat ½ inch of oil in a large cast-iron skillet or heavy pan over medium-high heat to 350°F (175°C).

  5. 4

Carefully place the chicken in the hot oil. Fry for 4–5 minutes per side until deep golden brown and cooked through (165°F internal temperature).

  6. 5

Remove chicken to a paper-towel-lined plate to drain. Season immediately with a pinch of salt.

  7. gravy

  8. 6

Carefully pour off most of the oil from the pan, leaving about 3 tbsp of drippings.

  9. 7

Add flour to the drippings and whisk over medium heat for 1–2 minutes to cook out the raw flour taste.

  10. 8

Slowly pour in the milk while whisking constantly. Cook, whisking, until the gravy thickens to your liking, about 3–5 minutes.

  11. 9

Season the gravy aggressively with black pepper and salt.

  12. To serve

  13. 10

Serve the chicken immediately, smothered in gravy, alongside mashed potatoes or biscuits.

From the Kitchen

Small Things That Matter

  • Pounding the chicken to an even thickness is key — it cooks evenly so nothing is dry before the outside is done

  • Let the breaded chicken rest on a rack for 5 minutes before frying so the coating adheres better

  • Maintain steady oil temperature — too hot burns the outside before the inside cooks; too cool makes greasy chicken

  • Season the gravy with a generous hand on the black pepper — it's supposed to have a peppery punch

Variations & Additions

Make It Yours

  • Add a pinch of cayenne or hot sauce to the egg wash for a spicy kick under the crust
  • Mix fresh herbs like thyme or chives into the gravy for a brighter, more aromatic version
  • Use chicken thighs instead of breasts for a juicier, more forgiving cut that's even harder to overcook
  • Serve with a side of pickled jalapeños and honey for a hot-honey Southern-style finish
  • Not feeling like chicken tonight? Try it on southern style biscuits for a southern comfort food
