Chicken Alfredo

Just because something looks difficult doesn't mean it has to be.

Beyond the Ingredients

Why This Recipe Matters

Chicken Alfredo is a dish many people associate with restaurants or a jar of prepared sauce from the grocery store. Its rich, creamy texture can make it seem like something that requires special ingredients or complicated cooking techniques. But the sauce itself is surprisingly straightforward. Butter, Parmesan, heavy cream, and a little reserved pasta water come together to create something that looks far more complicated than the process behind it.

The rest of the dish is equally approachable. The pasta is boiled, the chicken is seasoned and cooked in a pan, and everything is brought together with the finished sauce. What initially appears to be an elaborate meal becomes a series of familiar, manageable tasks once we begin preparing it.

We often encounter situations in life that seem more difficult than they actually are. We see what someone else has accomplished, recognize how impressive the finished result appears, and assume we lack the knowledge or ability to accomplish something similar.

But we're often judging the result without understanding what it took to get there.

When something appears complicated, we may hesitate to begin because we don't know everything that's involved. We imagine the difficulties we might encounter, question whether we're capable, and convince ourselves that we're not before we even take the first step.

Yet beginning is often how we discover what we're capable of. As we take action, we become familiar with what once seemed intimidating. We recognize abilities we already possess, learn things we didn't know, and find that challenges which initially felt overwhelming become easier to approach.

The Takeaway

We don't have to understand every step or know exactly how something will turn out before we begin. What seems beyond our abilities today can become manageable simply by giving ourselves the opportunity to try, learn, and discover what we can accomplish.

How to Make It

Directions

  1. 1

Bring a large pot of salted water to a boil. Cook fettuccine according to package directions until al dente. Before draining, scoop out ½ cup of pasta water and set aside. Drain the pasta.

  2. 2

While pasta cooks, season chicken breasts with salt and pepper on both sides.

  3. 3

Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 6–7 minutes per side until golden and cooked through (internal temp 165°F). Remove, let rest 5 minutes, then slice or shred.

  4. 4

In the same skillet, reduce heat to medium-low. Melt butter, then add garlic and cook for 1–2 minutes until fragrant.

  5. 5

Pour in the heavy cream and bring to a gentle simmer. Cook for 3–4 minutes, stirring, until slightly thickened.

  6. 6

Remove pan from heat. Stir in the Parmesan cheese a handful at a time until fully melted and smooth.

  7. 7

Add nutmeg, taste, and adjust salt and pepper.

  8. 8

Add the drained pasta to the sauce and toss to coat. Add splashes of reserved pasta water as needed to loosen the sauce to your desired consistency.

  9. 9

Add the sliced chicken on top.

  10. 10

Serve immediately, garnished with fresh parsley and extra Parmesan.

From the Kitchen

Small Things That Matter

  • Freshly grated Parmesan melts far better than pre-shredded — it's worth the extra minute of grating

  • Keep the heat low when adding the cheese — too much heat causes the sauce to break and become grainy

  • Pasta water is magical — the starch in it helps the sauce cling to the noodles beautifully

  • Don't let the Alfredo sauce sit too long before serving — it thickens quickly as it cools

Variations & Additions

Make It Yours

  • Add sautéed mushrooms or baby spinach to the sauce for extra heartiness and color
  • Try shrimp instead of chicken — it cooks in just 2–3 minutes and makes a wonderful seafood Alfredo
  • Stir in a pinch of red pepper flakes if you like a little heat in your creamy sauce
  • Use penne or rigatoni instead of fettuccine — the ridges catch even more of that luscious sauce
