Breakfast Burritos
New possibilities often begin with what we already know.
Beyond the Ingredients
Why This Recipe Matters
A breakfast burrito is made from ingredients we've probably enjoyed in countless other meals. Scrambled eggs, potatoes, peppers, onions, sausage, and cheese are all familiar breakfast foods. There's nothing particularly unusual about any of them, and most can be prepared in ways we already know.
But wrap them together in a tortilla, and something changes. The ingredients are familiar, yet the result is a completely different experience. What could have been a plate of scrambled eggs and potatoes becomes something new, simply because we've chosen to bring those familiar things together in a different way.
Life often presents us with situations where we feel uncertain about what to do next. We look for answers, new opportunities, or abilities we haven't yet developed, believing that moving forward requires something we don't already possess.
But we often underestimate the value of what we've learned through our own experiences.
The knowledge we've gained, the skills we've developed, and the lessons we've taken from past challenges don't have to serve only the purposes for which we originally learned them. An ability developed in one part of our lives may help us navigate a completely different situation. An experience that seemed ordinary at the time may provide insight when we need it most.
We don't always have to start from nothing when facing something unfamiliar. We can reconsider what we already know, recognize connections we hadn't noticed before, and find different ways to apply the abilities and experiences we've accumulated.

The Takeaway
Moving forward doesn't always require becoming someone different or having something more. Often, it begins with recognizing new possibilities in what we already have.

How to Make It
Directions
- 1
If using diced fresh potato, cook the pieces in a skillet with a little oil over medium-high heat, season with salt and pepper, and cook for 8–10 minutes until crispy and cooked through. Set aside.
- 2
In the same skillet, add a drizzle of oil and cook the bell pepper and onion over medium heat for about 4 minutes until softened.
- 3
Add the sausage or bacon and toss to combine with the vegetables.
- 4
Whisk the eggs and milk together in a bowl with a pinch of salt and pepper.
- 5
Move the filling to one side of the pan. Melt the butter on the other side, then pour in the eggs.
- 6
Scramble the eggs low and slow — stir gently and constantly with a spatula, taking them off the heat early while they're still slightly soft. They'll finish cooking from residual heat.
- 7
Warm the tortillas in a dry pan for 30 seconds per side, or wrap in a damp paper towel and microwave for 20 seconds.
- 8
Lay a tortilla flat. Add a scoop of potato, the egg and veggie mix, a sprinkle of cheese, and any salsa or sauce you like.
- 9
Fold in the sides of the tortilla, then roll it up tightly from the bottom. Wrap in foil if packing to go.
From the Kitchen
Small Things That Matter
Low, slow scrambling makes eggs creamy and tender — pull them off the heat just before they look fully done
Warming the tortilla first makes it flexible and easier to roll without cracking or tearing
To freeze: wrap assembled burritos tightly in foil, then store in a freezer bag. Reheat in a 350°F oven for 20 minutes or microwave on medium for 2–3 minutes
Don't overfill — a generously filled burrito is delicious but an overstuffed one just falls apart on you
Variations & Additions
Make It Yours
- Add a spoonful of black beans and a few slices of avocado for a more filling, Tex-Mex style burrito
- Swap sausage for leftover roasted vegetables for a completely meatless version that's still hearty and satisfying
- Add pickled jalapeños and a drizzle of chipotle sauce for a smoky, spicy burrito
- Use scrambled tofu seasoned with turmeric and cumin in place of eggs for a vegan option
